Edamame Hummus

A nice twist of the original. Very healthy snack.

EDAMAME HUMMUS

1 clove garlic, minced

1 bag thawed, shelled Edamame

1/4 cup plus 2 TBSP extra virgin olive oil

3 TBSP fresh lemon juice

3 TBSP tahini

Place all ingredients in the bowl of a food processor and process to a smooth paste. If mixture is too thick, add small amounts of water until it is the proper consistency.

Serve with pita chips, veggie sticks, you name it!
